Höpler invests in new bottling line for vintage 2019
If you are the owner of a house or a car you may be familiar with those large investments (like a new boiler or a new transmission system) which really hurt the wallet but which superficially, at least, go largely unnoticed by the casual observer. It is no different with investment in winery equipment, only there are usually a few more 00’s attached to the bill.
This past year has been significant – we have invested in a new filling line and are awaiting the arrival of a new cross flow filter, equipment that will ultimately improve the quality and clarity of our end product. But we would be lying if we were to give the impression one can buy a shiny new machine, plug it in and everything is instantly better. These are big investments (ones one makes every 15-20 years) with big impact on our operations. Workflow, winery procedures and quality control check points all have to adjust to the new way of working.
With wine our goal is to make the best product we can and retain the magic of the wine that is in the tank, when it goes into the bottle. During the filling process there are potential points where oxygen content could increase or filtration processes (to make the wine clear) could ‘knock’ out the subtle delicate flavours and aromas of a wine. Each grape varietal reacts differently so while we have been proceeding slowly to ensure we have it right, ultimately there is a point where you just have to trust yourself and move forward. This we did in January and so all our 2019 vintage wines have and will be filled with this equipment. Perhaps you will notice the difference!!
As many of you know we passionately believe in marrying the tried and tested methods of the past with the innovations of today. While these machines have the benefits of being more energy and time efficient they importantly have fewer processes during filtration so we use fewer consumables (i.e. filter aides), we produce less waste (wine loss, water usage in cleaning etc.) and the wines have a more gentle journey into the bottle. As ever we will continue to learn, to tweak and improve but we hope these steps will help you to taste a little more of the magic and the quality of our home on the Leithaberg in the bottle.
